BILL OF FARE FOR THE ALMS HOUSE. For BREAKFAST—Bohea tea and coaco shell alternately, with common brown sugar ; sapaan and milk occasionally ; good rye and Indian meal bread, with a moderate portion of butter; sometimes buckwheat or Indian or johny cake, warm, with butter or molasses; together with the potatoes and the residue of the dinner of the preceding day, if any. FOR DINNER— Soup, made of beef legs or shins and heads, or coarse meats, with rice. 2d, Codfish and potatoes. 3d, Pork and pease or beans ; also bean and pea soup. 4th, Common beef or mutton, occasionally. 5th, Fresh fish, viz. shad, herring and sturgeon, &c. in the season of it. Indian pudding, baked or boiled, with molasses. Vegetables produced from the garden, with the above, as shall be suitable, and as prudence and convenience shall dictate; observing strict economy and regularity. FOR DRINK—Sometimes spruce beer, made of healthy ingredients and with economy. FOR SUPPER—Bohea tea and coaco shell, or sapaan and milk—the bread as above, with a moderate portion of butter. The above courses to be varied as shall be suitable and convenient for the house, and for the health of the paupers.
